In the latest edition of Clubhouse Eats, Cozby demonstrates how to create such a group chicken wings on a charcoal grill and offers his best practical tips for making sure they come out perfectly crispy and delicious—an ideal snack for a game-time tailgate.
Cozby starts with a mix of flat wings and snare drum—a dozen of each. Place them on a tray and coat them with olive oil. Then it’s time for seasoning.
“Use whatever you want,” Cozby says. “Salt and pepper work well. I’ll go with Cuso’s Spicy Garlic Buffalo.”
Cozby then turns his arms to season the other side as well.
“I want the seasoning to be very balanced and equal on both sides,” he says. “If you put them in a bowl and throw them in there, I just don’t think it works as well.”
Cozby then turns his attention to the grill.
“I like to prop my charcoal grill up to one side,” he says. “It gives you a lot of flexibility. If it gets too hot, you can always put your arms on the other side.”
Cozby places his arms on the grill and closes the lid.
“We’re going to cook these wings real quick,” he says. “Check them in five or six minutes and see how they look.”
After about eight minutes, Cozby flips the wings to reveal a fresh edge – just what you want after all all of them sides of the arm.
After another eight minutes, the wings are done. Cozby puts them in a bowl to get them ready for a sauce bath.
“They’re your wings, use whatever sauce you want,” he says. “I’ll go with the hot Cuso honey buffalo sauce.”
Cozby pours the sauce on the wings and swirls them around the dish to coat them thoroughly. Then, it goes back to the grill.
“Let them go for a few minutes and then we’ll eat.”
After letting his arms cool for a few minutes, Cozby digs in, dipping one arm into some ranch dressing.
“Game day wings over the fire with that seasoning and Cuso sauce?” he says. “That’s very good.”
